Curry

My favorite spice to use in soups is curry powder.  Keep reading even if you don’t like curry!  A small amount does not make the soup taste like a typical curry dish, but it does enhance all the flavors and add a little kick that makes the soup taste rich and full-bodied.  I particularly love it in chicken soups.  And if you still are not a believer… I have served soups with a touch of curry to many unbeknownst curry haters.  Every single person loved the flavor of the soup and were surprised that there was any curry in it. And those, who did ask for the recipe and made the soup themselves, used the curry powder and continue to use it!
There are many different combinations of spices used in curry powder.  The most common are turmeric, cumin, ginger, and coriander.  Sometimes pepper and garlic too.  These spices are known to provide a lot of health benefits. Turmeric has been long used as an anti-inflammatory agent and considered an antioxidant.  Ginger is also considered an anti-inflammatory agent and is known to relieve stomach discomfort.

Salt

I like to salt throughout my cooking. A little dash of salt while sautéing or roasting vegetables and meat helps to bring out the flavor. I find when you wait until the end to add salt it tastes like salt laying on top of the soup even after you mix it in, verses the enhanced flavor of the ingredients salting as you go along gives. If you just lightly salt as you go along you won’t need as much at the end. If you are really concerned about the amount that goes in, pre-measure what you want to use and add it throughout the cooking.  Another tip: I like to make my stock low salt (not no salt).  If I accidentally over salt my soup, I can add a little stock to balance it out.
